This 'brown' version of our sourdough is a lot more interesting! The teff and buckwheat, together with caraway and coriander seed, give it a flavour similar to a dense European rye bread, but without the gluten! Those little white specks you see inside are the buckwheat groats we soak and add to the dough for even more texture. This bread has a pronounced sour taste, which may vary with each batch, from the natural fermentation process, so it goes well with rich fatty cheeses or butters, or dipped in soups.
There is no baker's yeast added to this bread; however, we have developed a sourdough culture of wild yeasts which is used in this bread.
We do not sell our sourdough starter.
