This mix makes fluffy pancakes that have a bit of extra flavour from a healthy dose of teff flour. You can try this mix with almond, soy or cashew milk for a dairy-free breakfast as well.
potato starch, teff flour, organic sorghum flour, organic quinoa flakes, organic baking powder, baking soda, sea salt, guar gum

Instructions per 1/2 bag:
Mix together 1 1/2 cups buttermilk (or 1 cup dairy-free 'milk'), 1 large egg, 1 tbsp melted & cooled butter (or canola/sunflower oil), and 1/2 tsp vanilla in a bowl.
Whisk in dry ingredients until just combined (do not overmix!). Let batter sit 10 minutes.
In the meantime, heat greased pan or griddle and fry medium scoops of batter. Once you see little air bubbles forming on top, flip pancakes until done.
Makes 8-10 medium pancakes.
