Macarons are mini cookie sandwiches made with almond meringue clouds that should be a bit crispy on the outside and soft on the inside, usually filled with buttercream.
For our dairy-free versions we fill them with our whipped vegan chocolate ganache instead! This ganache is made with coffee, but the predominant flavour is rich dark chocolate.

These macarons will last several days on the counter (the shells will start to get dry), but are best stored covered in the freezer and thawed for at least an hour before serving.
