CRUMB COATING MIX
Our gluten-free version of the iconic Shake 'N Bake coating mix is made with our breadcrumbs, a bit of starch and some herbs & spices (no garlic, no onion). All you need to do is mix in whatever oil you prefer and put it into a plastic bag for the shaking! We recommend 4 tbsp oil per 2 cups crumb mix - this will make your coating crispy. Add parmesan or minced garlic for a tasty variation.
This mix is good for chicken, pork, fish or prawns - or you could even try avocado or cooked sweet potatoes for a vegetarian dish.
gluten / corn / soy / nut -free, dairy-free if made with dairy-free bread - check labelling for each batch.
gluten-free bread crumbs (may be from any of our breads; flavour profile of each batch of mix will vary slightly depending on type of bread used), potato starch, sea salt, herbs & spices
Preheat your oven to 400 degrees F.
In a mixing bowl combine 2 cups crumbs with 3-4 tbsp oil (olive, canola or grapeseed would work well). You may find this easier to combine quickly in a food processor.
Pour crumb mix into a plastic bag big enough to fit one of the meat pieces with extra room to shake.
Prepare your meat portions (chicken parts or nuggets, pork chops or cutlets, etc) and have ready by your sink with the bag of crumb mix.
Grease or line a baking sheet with parchment (or use a Silpat if you have one!) and have it ready beside the meat.
Rinse each meat piece in cold water before placing in bag, then shake in the closed crumb mix bag (1 piece at a time works best).
Arrange pieces on baking tray as you go, and then bake until done! For boneless chicken breasts or pork cutlets it will usually take 15 - 20 minutes.
In the example photos below I used pork tenderloin, cut into 2" segments, turned cut side up, then pounded to flatten (I used my palm which is why they look less than uniform...). These pieces took 15 minutes to bake, and were very juicy!
