organic sorghum flour, organic cane sugar, organic amaranth flour, organic ground millet, organic quinoa flakes, tapioca flour, organic baking powder, guar gum, baking soda
Preheat oven to 375 degrees F.
Mix 3 large eggs, 1 3/4 cup buttermilk (or dairy-free 'milk' of your choice), 1 cup of butter melted & cooled (or canola/sunflower oil), and 1 tsp vanilla together in a large bowl.
Add dry mix and stir together briefly until just combined (do not overmix!). Fold in 2 cups berries, nuts or whatever you'd like to have in your muffins!
Scoop into greased muffin pan (or pan with parchment muffin liners), garnish with a sprinkle of sugar, and bake 20-25 min for large muffins (test with a toothpick to see if done).
